Majedara ( Lentals cooked with Rice)


This recipe is a little tricky because there are three things you need to cook, but I will put them in the order they need to be cooked. This is one of my favorite meals I had growing up I can never and I mean never pass up majedera it's that good. 1.Cook the Lentils Get one cup of lentils and wash until water runs clear. In a medium pot, put 3 1/2 cups of water Add some salt to taste Place on stove and leave until it begins to boil Once it starts to boil turn the temperature on low You need to keep and eye on the lentil it needs to be soft like a cooked grain of rice. (not mushy, and you will know if it is still hard to keep cooking it) These are lentils that I just put in water. 2.Chop one small onion In a small pot place 1/2 cup olive and 1/2 cup veggie oil to the pot On low heat add the chopped onion You will fry the onion until they turn to a brown color but not burnt They will still be crunchy. Once they are done leave to the side. Turn of the stove. Please note that the oil you see in the pot is too much, you only need enough to cover the bottom of the pot, that is it. This explains why the onion looked burnt. Once the lentils are cooked, save 1 1/2 cup of the water that the lentils where cooked in. Drain the lentils and leave to the side. In the same pot that the lentils were cooking in, place 1 1/2 cups of water and then the saved 1 1/2 cups of water in to the pot. 3.Cooking the rice So the total amount of water is 3 cups = 2 cups of rice. Rinse 2 cups of rice and place in the pot, add the lentils. Remember the small pot with the onion fried in the oil, drizzle the oil over the lentils and rice (leave out the fried onion but do not throw away). Add salt to taste Leave the pot on high mixing the rice and lentils When it begins to boil, turn the temp down to low Leave it on the stove for 15-20 min When the water has been absorbed stir softly Turn off the stove stir softly Serve with the fried onion on top and enjoy This can be served with salad since it may be a little dry, or you can eat it with a cucumber pickle which is equally tasty. Pictures to come. I did make this dish with the salad and home made dressing. I did forget to put the onion on top of the majedera, but that is what you would use the onion for.
