Tilapia and Wedged Fries

Ingredients
3-4 potatoes medium to large size (if they are large depending on the size of your family you may only need 2-3)
Bread crumbs
Garlic powder
Salt
Black pepper
Olive oil
Red pepper flakes
Parmesan cheese


Making The Wedged Fries


For these fries I kept the skin on but I did wash them well under water scrubbing all the dirt on the surface of the potatoes.
I cut the potatoes kind of thick, please note: I had run out of potatoes and was down to only 2 large potatoes, so I made those two and that was more than enough for two people for one serving each.


After cutting the potatoes put them in a pot and fill the pot with water, you only need enough to cover the potatoes and leave on the stove until the water begins to boil. The reason for boiling the potatoes is to cut the cook time in half so they don’t need to stay in the oven longer.
Once the water begins to boil, drain the potatoes and leave on the side.


In a small bowl mix all the ingredients ; Bread crumbs, Garlic powder, Salt, Black pepper, Olive oil, Red pepper flakes and Parmesan cheese. Add the potatoes and mix well in the bowl so all the potatoes are covered on both sides. I used the same ingredients to flavor the tilapia and it worked out beautifully.


The potatoes need to be spread out one layer on the pan so that nothing is over lapping them and lightly drizzle a little olive oil but not too much over the fries. The fish you just make sure they are coated evenly on both sides (I usually add egg to help them stick to the fish or chicken but I did not use egg this time) and place on a pan.
